That's how they've done it in this old Amsterdam tasting house for centuries, and the room looks exactly as you'd expect: unchanged, unhurried, and slightly miraculous. The jenever and house liqueurs come from a small distillery a few doors down, and the list is long enough to keep you honest about how many you'll try.
