The team behind Propio trained at Quintonil and Eleven Madison Park, and the menu is rooted in Northern Mexican tradition without feeling like a history lesson. The room is midcentury-handsome, reservations fill up fast, and the MB100 named them Emerging Chefs of the Year in 2024. Book ahead.
