The owner, cap tilted, beard bristling, greets you like he's been expecting you, steers you toward a natural wine from a friend's vineyard, and lets the food do the rest. This wine-bar bistro in the 19th runs a short, no-nonsense French menu with offal on it most days, cooked by a British chef who came up under Bruno Doucet. The room is exactly as lived-in as it sounds, and nobody there seems to mind.
