Handmade Toluca-style chorizo and sausages are the whole point at this tiny taqueria near the Mercado de San Juan in the Centro Histórico. A handful of red stools fill up fast, so arriving late means eating standing at the counter, which plenty of regulars do without complaint. The obispo, a thick pork sausage seared to a light crisp, and the tamarind chorizo are the ones to order, then pile on salsa, cilantro, and onions.
