  1. The samosas here are filled with suadero, which tells you everything about what Norma Listman and Saqib Keval are doing at this Michelin-starred restaurant in Centro. African, Indian, and Mexican cooking converge without any one tradition elbowing the others aside. Veracruz prawns arrive aggressively grilled with vanilla butter; the table fills fast with people who came specifically for exactly this.
