A trattoria tucked near Las Palmas's old literary quarter, Rígolo is built around the idea of cooking the way someone's grandmother would, if that grandmother also imported her cheeses and charcuterie from small Italian producers. The chef spent years under Nacho Manzano before channeling that experience into handmade pasta and slow, regional Italian cooking with the odd Canarian twist keeping things honest.
