    Dutch

    An electric vehicle pulls up with the day's vegetables, which sets the tone for this plant-forward restaurant on the Goudsesingel. The open fire gets as much use as the open kitchen, and the cooking leans hard into Dutch produce, ferments, and enough umami to make you forget meat was ever an option. Vintage-feeling room, young chefs, and a Michelin Bib Gourmand to show for it. The attached Bar Bocht does coffee and snacks by the same philosophy.
