    Japanese French

    The name comes from the annatto plant used to give mimolette its orange rind, which tells you exactly how seriously this eight-seat omakase counter takes cheese. The chef worked the cheese program at Caprice before building a menu around ten to twelve courses where French and Japanese technique take turns with the same ingredient, baked, braised, foamed, or tucked into rice. The bar does casual cheeseboards if commitment feels like a lot.
