    A remodelled wooden townhouse in Gion dressed in sukiya style, where antique and modern dishware share the table without competing. This is a fine dining kaiseki restaurant holding two Michelin stars, and the chef's approach is to treat French flameworking as a quiet tool inside a strictly Japanese framework: salmon served mi-cuit, beef rested in stages through its cook. The name means "aspire to the heavens," which, given the food, turns out to be a statement rather than a boast.
