Salobie BIA is a sit-down restaurant on Rustaveli Avenue built around the bean, which in Georgia is a bigger deal than it sounds. The kitchen digs up older dishes too, including a millet-based one from before beans took over the national diet, so it's a bit like eating the sequel and the original in one sitting. The room is plain and calm, and the white plum sorbet with white chocolate is what dessert people mention. Gault&Millau gives it 2 Toques.
