A 13th-century castle turned contemporary restaurant, where the kitchen runs Mediterranean and Asian influences through a tasting menu format without making a fuss about the collision. Dinner means four to six courses; lunch is a bit more relaxed. The sommelier runs service with the kind of quiet authority that makes a room feel looked-after. When summer arrives, the terrace beside the little River Birsig does most of the convincing on its own.
