Roots is a two-Michelin-starred tasting restaurant near the Basel Zoo where Pascal Steffen runs a seven-to-ten-course surprise menu, ingredients disclosed, dishes plant-forward but not doctrinaire. The cooking is clean and precise, with much of it finished tableside so the kitchen stays visible. Wine pairings or house-made non-alcoholic alternatives both hold their own.
