This is the diner tucked inside the El Cortez, an old Fremont Street casino hotel, with a menu long enough to need its own table of contents. Breakfast, lunch, dinner and a late-night run all share the pages, and prime rib is the house specialty at any hour. It's a proper diner, so nobody dresses up, and weekends it keeps going until 7 a.m. for people whose night has outlasted their plans.
