    Modern Mediterranean

    A Michelin-starred modern restaurant tucked behind Nîmes' Roman amphitheater, where the chef spent years cooking at some serious southern kitchens before coming home. The menu leans hard on vegetables and regional produce, with Mediterranean fish and local asparagus doing most of the talking. When the sun comes out, the maple-shaded patio fills fast, which in Nîmes is most of the year, so plan accordingly.
