This Vietnamese cafe in South Seattle pairs deep-cut dishes like stir-fried snails in coconut sauce with banana cookie crumble matcha lattes, and somehow neither feels out of place. The bánh xèo comes gasp-inducingly large on a woven basket ringed with herbs. Seattle Met named it one of Seattle's best new restaurants in 2025.
