Jeremy Ford runs this modern tasting menu restaurant inside the Venetian, and the kitchen leans hard into vegetables without pretending it isn't also very interested in wagyu and foie gras. Two tasting menu lengths give you a choice of how long to commit, but the bar menu with its cacio e pepe puffs and charred jerk carrots is a genuinely good argument for just pulling up a stool instead.
