Dashi drawn in an enamelled pot, on the theory that enamel pulls a purer umami, tells you where the chef's head is at. This is a Japanese restaurant where tradition gets interrogated rather than just repeated: sashimi marinated in soy or wrapped in nori, familiar foundations pushed somewhere new. The name is a nod to the kitchen where he trained, and the cooking reads like a conversation with that debt.
