Counter sukiyaki in Toranomon, where the server stands opposite you and works the pan directly in front of your face, layering alternating slices of beef and vegetables with the calm precision of someone who has done this ten thousand times. The beef comes from a Shiga Prefecture butcher and arrives in varying thicknesses. Two egg dipping sauces, one beaten to meringue, close out each round before shirataki noodles mop up the remaining warishita and beef fat.
