Conger eel grilling over bamboo grass on an earthen brazier is the kind of detail that tells you exactly where you are. This Michelin-starred sushi counter in Higashiyama grew out of the Gion Sasaki kitchen, and the training shows: chefs coordinate silently, timing each piece to land at peak form. Two types of sushi rice rotate by topping, and steamed or grilled courses weave between the nigiri in a way that keeps the meal moving.
