It holds a Michelin star and leans firmly Edo-style: rice from the previous harvest, cooked firm, vinegared sour rather than sweet, and held at body temperature. Fish comes largely from Kitakyushu, with market runs to Tsuruhashi and Kuromon. The sea-urchin portions are notably generous.
