It's a traditional sushi-ya in Osaka's Tennoji neighborhood, where the fish comes from Kuromon Market and freshness is treated less like a selling point than a basic obligation. The name nods to a kanji meaning "calm," and the room carries it: precise, unhurried, rooted in the kind of technique that doesn't need explaining.
