A sushi counter in Osaka's Tenjinbashi where the chef grew up around fish before he grew up at all, his family being in the fishing trade. The omakase moves between small side dishes and nigiri so the pacing keeps you guessing. He chooses red or white vinegared rice by the fish rather than by habit, and resting and marinating each piece is central to his method, not an afterthought.
