The name itself is a thesis: "hajime" means beginning, and the chef has built an omakase sushi counter around returning to the roots of the form, fish salted and simmered the old way rather than sliced and served raw. Pieces come small and numerous, which suits the style, since the point is range and precision together. Kagurazaka adds a quietly literary neighborhood to an already considered room. The Michelin Guide lists it among its selected restaurants in Tokyo.
