Japanese
A tea-and-sweets counter on the second floor in Kagurazaka where the star of every pairing is the tea, not the other way around. The chef travels to the growers and picks the leaves himself, then builds a menu around regional character, anchored by yokan, a fruit jelly fermented until the sweet-sour balance lands exactly where he wants it. Bring patience and a willingness to drink slowly.
