Sixteen seats, a cave-dark room of blackened steel and raw timber, and a Korean omakase menu that changes with the seasons. SUUM is the kind of quiet, focused dining room where you arrive, accept a glass of housemade makgeolli with a snack, and hand the evening over to the kitchen. The two Chef Hat tasting menu runs a dozen or so courses, rooted in Korean tradition and clearly comfortable straying from it.
