    The red trompo of adobada spinning at the center of this taquería is less a cooking apparatus and more a landmark. The Valadez family has been running the place for decades, and on any given night it is probably Tijuana's busiest, with carne asada going over mesquite and suadero, tongue, and chitterlings frying in their own fat on the comal. Orders come dressed fast with onion, cilantro, guacamole, and salsa.
