You order at the counter, get tacos fast and cheap, then dress them yourself at a salsa bar stocked with radishes and limes. The line looks like a hostage situation but moves briskly, and it stays open until 2 a.m., 4 on weekends, for people with a long night behind them and no regrets yet.
