  1. Nigiri shaped like o-hagi, the sweet red bean rice cakes, is a signature passed down from a mentor, and it tells you immediately that this Ebisu sushi counter has its own way of doing things. The chef and his team alternate nigiri with drinking snacks, inventive enough that you genuinely can't guess what's coming next. Rice comes seasoned with red or white vinegar depending on the fish, and the omakase mood is loose and convivial rather than reverential.
