  1. Taurus Ox

    Laotian

    The smash burger with house-cured pork jowl and jeaw condiment is either a flex or a provocation, possibly both. Taurus Ox is a casual Laotian restaurant that moved out of its original counter spot into a proper dining room, and the menu came with it. Khao poon and a family sausage recipe built around lemongrass anchor the Lao side of things, while that burger quietly complicates any notion of what the restaurant is supposed to be. The New York Times named it among Seattle's 25 best.
