  1. Ten pieces of tempura arrive in a fixed procession, tiger prawn first, then a back-and-forth between seafood and vegetables that follows the season. The chef's background across Japanese cooking disciplines shows up in what gets chosen, deboned pike conger, Japanese mugwort gluten cake, each piece fried in cottonseed oil and served with warm dipping broth. Tables fill every night, and first-Sunday reservations open two months out.
