The farm outside supplies the kitchen, the kitchen wastes nothing, and the resident dogs patrol the terrace as if they own it. This plant-forward restaurant in Silivri, a long drive west of central Istanbul, sits on a working estate and leans into it: poultry, vegetables, and herbs grown on-site, with estate wine to wash it all down. Kasseri tortellini and veal tongue pastrami give the menu just enough swagger to keep things interesting.
