The Chairman is a Michelin-starred Cantonese restaurant that holds the number one spot on Asia's 50 Best and sits inside the World's 50 Best. The cooking updates classic Cantonese with new recipes built on old foundations, and the room runs quietly, without theatrics, which somehow makes it feel more serious.
