American
A sourdough starter that's been going for decades anchors the bread program at Christopher Kostow's wood-fired California restaurant in Saint Helena, where nearly everything on the menu passes through flames at some point, including the soft serve. The courtyard, strung with lights and wrapped in greenery, adds heated yurts when the valley cools down. The cheeseburger has its own following, and the soft serve is not an afterthought.
