    A Gothic church facade from the mid-1800s giving way to floor-to-ceiling glass and 77 airy rooms is a pretty good argument for adaptive reuse. This boutique hotel sits just off the top of Leith Walk, and the rooftop garden overlooking the city earns its reputation as the main reason to book. A whisky lounge and serious room service keep you from needing to go anywhere you don't actually want to be.
