The Hoxton, Southwark is the group's third London outpost, and the neighborhood, a short walk from Tate Modern and Borough Market, finally caught up with the concept. Rooms run from genuinely compact to generously roomy. Downstairs there's an all-day Italian restaurant, a mezzanine bar, and Seabird on the roof for oysters and Thames views.
