    Three circular buildings hover above a red mangrove forest, designed to mirror the Pleiades constellation as it appears overhead each December. This St. Regis resort sits on a private beach cove beside the Sian Ka'an Biosphere Reserve, well away from the party strip. Ground-floor rooms have plunge pools; suites add hammocks and outdoor showers. Butler service, a Forbes Four Star, and a Michelin Key round out the case for staying in rather than going anywhere.
