The trapizzino is a triangle cut from thick white pizza dough, pocketed and stuffed with Roman home cooking, and Stefano Callegari invented it at this Testaccio street food counter. Supplì and croquettes round out the menu, and the fillings run from meatball in tomato sauce to tongue in green sauce for anyone feeling confident. It has since spread to New York, which tells you something about how the city feels about a warm doughy pocket of braised things.
