  1. A wine list arranged in chronological order starting around 7,000 BC is one way to open a conversation. Trivet is a two Michelin star modern restaurant a short walk from London Bridge, run by two Fat Duck veterans whose shared instinct is to pull back rather than show off. The cooking is precise and imaginative without the theatrics, and the wine leans hard into Georgia, Armenia, and the Middle East, which is rarer than it sounds.
