A one-man omakase counter in the heart of Jerez, where the chef runs the entire operation solo and the bar is close enough that you'll watch every cut and fold up close. The meal runs about three hours and changes with the market, so the menu is more of a conversation than a document. Booking is non-negotiable, and small talk while the last guests settle in is apparently part of the deal.
