A converted sherry bodega in the middle of Jerez, with ceilings tall enough to make you feel underdressed even when you're not. This is a sit-down restaurant with tasting menus built around the wines and sherries of the region, alongside an à la carte that keeps one foot in Andalusian tradition. One menu is a tribute to Lola Flores, which tells you something about the room's sense of drama. The sherry pairings are the whole point.
