    The name comes from the viticultural practice of aerating vineyard soil, which tells you something about how seriously Jerez takes its culinary roots. Juanlu Fernández runs the two-Michelin-starred LÚ Cocina y Alma nearby, and this is his looser, more everyday room: traditional Andalusian cooking with Colombian inflections woven in, a nod to his business partner. Stews, reinterpreted classics, and plates that feel inherited rather than invented.
