Jazz plays softly at this 12-seat cypress Edomae sushi counter in Tsim Sha Tsui, where the mood is warmer than the typical hushed reverence the format usually demands. The chef trained for over a decade under a Japanese sushi master and now nudges tradition with Hong Kong instincts, using dual vinegars on the rice to suit each fish. Toyosu fish arrives daily. Sake is on the menu, and so are tequila highballs, which tells you something about the room.
