Japanese
Twelve seats at a single bar, one seating, everyone starts together, no stragglers tolerated. This kaiseki-influenced omakase in La Bonanova has the chef cooking Japanese tasting menus that move between the Mediterranean and Japan, with the robata grill doing a lot of quiet work on the flavors. Classic kaiseki forms like hassun and sashimi share the menu with looser, more inventive ideas. The neighborhood is residential and unhurried, which suits the format.
