The chef makes the ceramic bowls himself, which tells you a lot about the pace of a meal here. This Greenpoint soba shop occupies a warehouse with factory windows and skylights, and the hand-cut buckwheat noodles, served cold or hot with dashi, are the point. Pricing runs steep for a noodle lunch, but the room is genuinely industrial and the gluten-free menu surprisingly complete. Soba-making classes also run here, if you'd like homework.
