  1. An L-shaped hinoki counter glows under warm, calibrated light inside this omakase room tucked into a residential tower in Bay Village. Chef Sky Zheng works in the edomae tradition, letting high-quality fish imported from Japan do the talking with minimal but precise seasoning. Three seatings run nightly, so showing up on time is less a suggestion than a rule. The Michelin Guide has selected it.
