A basement yakitori counter where the chef's fixation on Kyotamba chicken shapes every skewer. Many pieces are wrapped in skin to draw out the fat's flavor, and the kitchen borrows moves from Japanese cuisine, marinating chicken in kombu broth or folding it into meatballs with takikomi-gohan rice. The cleverest trick: skewers laid over vegetables as they grill, the vegetables quietly soaking up everything dripping from above.
