The Peking duck here gets air-dried for 48 hours and slow-roasted over lychee wood, a method old enough to predate the restaurant industry as a concept. This is a polished Chinese dining room on the fifth floor of Paragon, all dark wood and circular tables, where the food does the talking and the room wisely stays out of the way. Pre-order the duck; showing up without one is an optimism that rarely pays off.

Hainanese
Keng Eng Kee is a zi char hawker spot in Alexandra Village, with ceiling fans, fluorescent lights, and round tables built for large families who order for the whole group at once. The pork ribs come glazed in a coffee gravy, and the moonlight hor fun arrives with a raw yolk on top that you stir in yourself. Dress for the humidity and bring more people than you think you need.

Pizzeria
Vintage Italian lithographs line the walls and the open kitchen counter pulls you in at this Joo Chiat pizzeria, where the dough work is methodical enough to be its own quiet argument. The Diavola has a crust with real structure, and the dessert list earned a 50 Top Pizza Asia-Pacific special award. Prices sit above the neighbourhood average, but the room is dressed for it and the staff knows the menu cold.

Rank 137. Na Oh
Contemporary Korean
Contemporary Korean dining inside a Hyundai robotics factory is a sentence that requires no embellishment. Na Oh sits on the third floor of Singapore's HMGICS smart innovation hub, shaped by the culinary vision of Corey Lee of San Francisco's Benu. The name translates loosely as "moving from the inside out," which is either a philosophy or a very good description of what a good meal does to you.

Finding this Peranakan dining room means wandering the National Gallery past a lot of oil paintings, which at least counts as pre-dinner culture. The cooking is Chinese-Malay and tastes like a good grandmother's, with fancier plating and a view over the Padang. Some classics run tamer than the hawker versions, while the twists, like laksa cream over baked cod or a meatless rendang, are where it gets interesting.

Rank 137. Revolver
Indian Barbecue
The custom-built tawa, the hand-built tandoor, and an open fire give the kitchen at this modern Indian restaurant on Tras Street more heat sources than most places have cooks. The sunken open kitchen is the real draw, which is awkward for the much-celebrated silver-and-black dining room behind it. Bold seasonal cooking comes off the woodfire rig in combinations that lean confidently away from tradition. A chef's table rounds things out for those who want a front-row seat to the smoke.

Rank 137. Somma Restaurant
Puglian Italian
Warm clay tones, stone counters, and timber tabletops set the mood at this Puglian Italian restaurant tucked into New Bahru's School Block. The kitchen cooks in the Pugliese tradition, letting the ingredients carry the argument: think charcoal-kissed radicchio, Mare Piccolo mussels, slipper lobster with spaghettone. It's the kind of place that makes restraint feel generous, and that's harder to pull off than it looks.

Sushi
Pink Gucci cranes on the walls of the second dining room set an unexpected tone for a sushi counter this serious. Chef Masaaki Sakashita flies fish and seafood in from Toyosu Market several times a week and works through it with traditional technique. The omakase runs about two hours, though the tea and dessert stage has a way of making that feel like a loose suggestion rather than a schedule.

Rank 137. Ushidoki Wagyu Kaiseki
Japanese
Ozaki wagyu, raised longer than convention allows, is the single organizing principle of this kaiseki restaurant on Tras Street. The chef came up through sushi and brings that same exacting focus to beef, working tongue-to-tail through grilled, braised, and deep-fried preparations before landing on sukiyaki with soft egg and black truffle. It's a serious, single-subject tasting menu in a city that does those well.
