    A renovated house with enough history that a famous Spanish poet once slept here, now running as a regional restaurant with an à la carte and a handful of set menus. Vegetables lead the way, most of them sourced from the river-hugging market gardens of Tudela's Mejana growing area, which the kitchen has relied on for years. A separate dining room called El Choko de Remigio handles the more seasonal, locally focused end of things.


  2. Tudela's market gardens have found their most devoted kitchen in this intimate, minimalist tasting-menu restaurant attached to the historic Remigio hotel. The Salcedo brothers, Luis cooking and Juan on sommelier duty, put local seasonal vegetables at the center of every plate, with meat appearing only as a supporting note. Two versions of the menu run concurrently, a shorter one and a longer one that changes its name by season.

    Plant-based Spanish

    A small olive tree grows inside the dining room, which tells you something about how seriously Treintaitrés takes its plant-based identity. This Tudela restaurant leans on the region's famous vegetable-growing tradition, running an à la carte alongside tasting menus, with a terrace out front and quieter rooms upstairs for when you need them. The family has been in hospitality forever, and it shows in the unhurried pace of things.

    Contemporary Spanish

    A pedestrian street in Alfaro is an unlikely place to find a chef who trained under one of Spain's most celebrated cooks, but here we are. Morro Tango is a contemporary Spanish restaurant where the kitchen leans hard into Rioja's larder, shopping the market daily and keeping the menu rooted in local produce. The Michelin Guide recognized it with a Bib Gourmand. The stews are worth asking about specifically.

    Modern Spanish

    The menu at this modern restaurant is organized like a road trip through Aragon and the Cinco Villas region, with each dish anchored to the landscape around it. The chef came up through big-name kitchens before returning home to cook on his own terms, and the tasting menu and rotating daily plates show the range. Locals who know his tapas competition record fill the room with a certain confidence about what's coming.
