Tudela's market gardens have found their most devoted kitchen in this intimate, minimalist tasting-menu restaurant attached to the historic Remigio hotel. The Salcedo brothers, Luis cooking and Juan on sommelier duty, put local seasonal vegetables at the center of every plate, with meat appearing only as a supporting note. Two versions of the menu run concurrently, a shorter one and a longer one that changes its name by season.
