It started as a pop-up, and it still has that energy.

    The menu is written on butcher paper, the floors are concrete, and the white bread is made in-house and served alongside your tray, which is how Central Texas does it. This no-frills BBQ shop off Curry Ford Road holds a Michelin Bib Gourmand for the kind of smoke-forward brisket and pork ribs that don't need explanation. The jalapeño-cheddar sausage and collard greens with garlic are the sides people come back to argue about.


  3. A barbecue counter inside Disney Springs with a waterfront view and exposed ductwork, which is either a contradiction or a vibe depending on your tolerance for theme parks. Order at the counter or the full-service bar and everything arrives at your table on its own. Black pepper-rubbed brisket sliced thin is the move, and cocktails come on draft, which feels appropriately excessive for the setting.
